| Section 177: Catsup, Sauces and Salsa |
All canned goods must be canned according to U.S.D.A. methods for safe preservation of foods in the home. (Food preservation publications are available through the Cooperative Extension Service (301) 868-9401.) For safety reasons, canned goods preserved by other methods and/or in non-standard canning jars will not be accepted. Canned goods may be opened during judging.
Section 177: Catsup, Sauces and SalsaTomato catsup is made of strained seasoned tomato pulp. Chili sauce is made of tomatoes and spices cooked in vinegar (not strained). Pepper sauce is a mixture of chopped green and/or red peppers, which are spiced, cooked in vinegar and strained. Pepper sauces and salsa can be sweet, sour, hot or mild.
The recipe must be submitted with the entry. Relishes must be processed in a water bath canner.
